How to make airy and crispy homemade bread? A secret ingredient makes all the difference

Bread is the essential of our table. More than 80% of the French admit that they cannot do without it. If you want to try your hand at making homemade bread, discover some tips to make it a success.

Making homemade bread is not as complicated as you think. It is above all very economical since it costs 40% less than commercial bread. If the bravest get their hands dirty, most homes are equipped with the famous bread maker. Let’s see a little tip from our Canadian friends for a soft and golden bread.

Homemade Bread Recipe: Canadian Style

For homemade bread, of course, we all know you need flour, yeast, salt and water, but on the other side of the Atlantic, we add a little touch that makes all the difference. This ingredient is everything. just honey. Here’s a simple recipe for an airy, crispy loaf:

Ingredients :

  • 660 ml of lukewarm water
  • 30g of honey
  • 10 g bread yeast (dry)
  • 650 g of wholemeal flour
  • 470 g of top quality wheat flour
  • 50 g vegetable butter
  • 20g of salt

1- Put warm water in a large container. Add honey and stir until dissolved. Sprinkle with dry yeast and stir with a whisk until smooth. Add two tablespoons of whole wheat flour and mix. Cover with a kitchen towel. Let rest 15 minutes.
2- Add salt and melted butter to the dough. Add the whole wheat flour then the premium flour and knead well.
3- Form a ball of dough and place it in an oiled bowl. Cover it with plastic wrap and let it rise for 1h30 to 2h until it doubles in volume.
4- Put the dough on an oiled work surface and divide it into 3 equal parts. Form 3 balls, cover with transparent film and let rest for another 15 minutes.
5- Shape 3 loaves according to the desired shape, cover them with vegetable oil, cover them and let them rest in a warm place for one hour.
6- Bake the loaves in an oven at 200°C for about 40 minutes, until golden.

Some tips for making homemade bread

No, making homemade bread is not complicated! If you want to embark on the adventure and join the 25% of French people who already practice home baking, here are some practical and useful tips:

1- Choose a quality flour : there is no good bread without good flour! Prefer organic flours, without additives, unrefined. Wheat flour is certainly the most widespread, especially T55, but it is not the healthiest because it contains a lot of gluten. Feel free to choose higher types T65, T80, the higher you go the more complete and beneficial the flour will be. Also think about using other bread flours such as rye or spelt, rich in iron and low in gluten. You can also mix and match different flours to suit your tastes and diet, and switch to a healthier gluten-free bread.
2- Beware of water : Do not use tap water but mineral water at room temperature for the yeast to rise.
3- Yeast : obviously you have to use baker’s yeast and not pastry yeast, fresh or dehydrated. You can add a teaspoon of sugar or honey to activate its powers. You can also opt for sourdough.
4- room temperature : always make your bread in a warm place, the dough does not like the cold!
5- For a French toast : Put a small bowl of water in the pan during cooking, to have a soft bread and a crispy and colorful crust.
6- Invest in a bread machine : if you have decided to make your bread at home, it will make your work easier and save you a lot of time. It allows you to make different types of breads and supports kneading, resting time and baking.
