  1. Wash your cucumbers, cut off the ends, and peel them if their skin is thick.
  2. Next, place your veggies in a zip-lock bag, add two small pinches of fine salt (or coarse salt), and seal well.
  3. Give your cucumbers a few good whacks with the pan or rolling pin, do it firmly but gently! Crush with the flat of a knife blade if you like (as you do with garlic), it’s simple and convenient!
  4. Repeat the operation as many times as necessary, until your cucumbers are well flattened and separated into several pieces.
  5. Let rest for at least 20 minutes so that the water they contain drains well.
  6. And jump! all you have to do is put them in a colander and rinse them well to remove the salt and dry them with a clean towel and voila!
